Today we had a group of our new middle school students have a nutrition and cooking class with some of our university students.

It was a great way for the middle school students to meet their future mentors in a fun environment. They watched a wonderful video in Tzu’tujil that expained how the invasion of the Conquistadores changed their tradtional diet and how we are hoping to reintroduce chaya, chia and amaranthus back into their diet.

They made tortillas with chaya. Traditionally boys do not make tortillas….it is classified as womens work. However in our classes everyone participates in all activities.

There was tons of laughter as the boys struggled to make round tortillas.

The group made several inexpensive , nutritious, tasty items in cluding a pineapple chia drink.

Then everyone sat down to eat and enjoy the fruits of their labour.
